Happy National Blueberry Month!

July is National Blueberry Month!

( a.k.a. Cole’s favorite food month in our house)

To celebrate we have eaten blueberries almost daily as a snack, in a smoothie, in muffins, pancakes, yogurt, scones, on salads, you name it, if you can put blueberries on it, we like it!

1 cup of blueberries has about 80 calories and is virtually fat free. They are a powerhouse packed with antioxidants, vitamin C, fiber, and more. To read all about the healthy benefits of blueberries, read here.

Here are a few of our delicious blueberry recipes.

Blueberry yogurt pancakes

1c whole wheat flour

2 t baking powder

1 1/2t sugar (optional)

1/4 t salt

1 egg

1/8 c canola oil

1 (6oz) container of greek yogurt  (I use chobani)

1/4 c milk

Banana- Blueberry Muffins

3/4 c nonfat buttermilk

3/4 c lightly packed light brown sugar

1/4 c canola oil

2 eggs

3 mashed ripe bananas (about 1 cup)

1 1/4 c whole-wheat pastry flour

1 c whole wheat flour

1 1/2 t baking powder

3/4 t cinnamon

1/2 t baking soda

1/2 t salt

1/4 t nutmeg

1 1/4 c blueberries, fresh or frozen

Baking directions

Blueberry- Lemon Scones

2 c whole wheat flour

1/4 c sugar

2 t baking powder

 1/2 t salt

3 T unsalted butter

1/2 c nonfat buttermilk

1 t grated lemon zest

1 t vanilla extract

 1 egg

3/4  c blueberries, fresh or frozen

milk for brushing tops

Baking directions

Frozen Blueberry Smoothie

1 c blueberries, fresh or frozen

1 banana

1/2 c apple or orange juice

4 T crushed ice
