Snack Week

Today’s snack is Baked Oatmeal Bars, which are super easy and great for a snack or a quick breakfast on-the-go.

I am not thrilled with how they photographed, but oh well.

What you’ll need:

  • 1  1/2 cups quick cooking oats
  • 1 tsp baking powder
  • 2 T flax-seed meal
  • 1/4 cup brown sugar (or honey)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1 egg
  • 1 T butter, melted
  • 2 T raisins

Directions:

  1. Preheat oven to 350°
  2. In a medium bowl, combine oats, baking powder, flax meal, sugar, and spices
  3. In separate bowl, whisk together wet ingredients
  4. Pour wet ingredients into dry and mix to combine
  5. Pour mixture into a lightly greased or parchment lined square baking dish; either 8×8 or 9×9
  6. Bake for 20-25 minutes, until edges slightly brown
  7. Cool, Cut & Enjoy!

You make this a so many different ways. If you omit the cinnamon, nutmeg, and raisins you are left with basic oatmeal in which you can add a variety of ingredients or come up with your own creation. Here are a few suggestions: 

– 1/2 cup peanut butter

– 1 T cocoa powder and 1/2 cup of chocolate chips

– 1/2 cup blueberries

– 1/2 cup diced apples and 1  1/2 tsp cinnamon

– 1/2 cup pumpkin puree with cinnamon and nutmeg or chocolate chips

– 1/2 cup mashed banana

the possibilities are endless…
